ARTISANALLY PRODUCED ANCHOVIES The Anchovy of the Cantabrian Sea (or Bocarte as it is known in Asturias) is chosen for its freshness and size. Kept in salt for at least 7 months under temperature control. After, it is elaborated artisanally and sent on order to our clients in isothermic transport. The exquisite taste of the anchovies is the key to our success. The secret is in the curing process of the fish and just the right amount of salt that is left once the fish has been cleaned. It is also important the delicacy and thoroughness with which the fillets are cleaned, vouching for the quality of our product. |
