Sea Urchin Caviar

 

ARTICHOKES STUFFED WITH SEA URCHIN CAVIAR AU GRATIN

Ingredients for 4 people:

12 fresh artichokes, 250g of sea urchin caviar, 1 medium sized onion, 1 glass of brandy, 100g of tomato sauce, 4 eggs, 250g of butter, 1 lemon, salt and butter.

 

Preparation:

Boil fresh artichokes with lemon until they are white. For the filling, sauté finely chopped onion, mix with the sea urchin caviar, flambé with the brandy and then cover with the tomato sauce. Add salt and pepper. For the sauce beat the egg yolks at bain-marie temperature. Add the lemon juice and then the melted butter until it bonds. (Don’t forget the salt).

Then cover the stuffed artichokes with the sauce and grill them in the oven.
